Can can I create a query (group) showing all the contact process that are pending (not yet completed)?

If you go to the View menu and choose Processes, this is the Process Manager and will show you exactly what you are looking for.

Within the Contact query builder highlight the Process table and select the Status field <> -100

Or, as Dale said you can view the Status for each Process via the Process Manager.
